Crockpot Chicken & Dumplings

2 boneless, skinless chicken breasts (I doubled the recipe since we were cooking for extras and I only had three chicken breasts. It worked out great though.)
2 Tbsp. butter
2 cans cream of chicken soup
1 (14.5 oz) can chicken broth
1/2 onion, diced OR you can use 2 Tbsp. dried, diced onion
1 Tbsp. dried parsley
4 Grands flaky refrigerator biscuits

3 whole large eggs (separated), 3 tablespoons low fat cottage cheese (or fat-free cream cheese), 1/4 teaspoon cream of tartar, 2 teaspoons Splenda sugar substitute, granulated (or preferred artificial sweetener)

Ingredients: 1 Tbsp olive oil, 1 small onion, 2 cloves garlic, 1 (15 oz.) can diced tomatoes, ½ tsp dried oregano, ½ tsp dried basil, pinch red pepper flakes (optional), freshly cracked pepper to taste, ½ tsp salt, 2 Tbsp tomato paste, 2 oz. cream cheese, ¼ cup grated Parmesan, ½ lb. penne pasta, ½ (9 oz.) bag fresh spinach.
