Crockpot Chicken & Dumplings

Super delicious, but probably not healthy. :) Ah well\n\n
Ingredients\n
2 boneless, skinless chicken breasts (I doubled the recipe since we were cooking for extras and I only had three chicken breasts.  It worked out great though.)\n
2 Tbsp. butter\n
2 cans cream of chicken soup\n
1 (14.5 oz) can chicken broth\n
1/2 onion, diced OR you can use 2 Tbsp. dried, diced onion\n
1 Tbsp. dried parsley\n
4 Grands flaky refrigerator biscuits\n

Ingredients:
1 Tbsp olive oil, 
1 small onion, 
2 cloves garlic, 
1 (15 oz.) can diced tomatoes, 
½ tsp dried oregano, 
½ tsp dried basil, 
pinch red pepper flakes (optional), 
freshly cracked pepper to taste, 
½ tsp salt, 
2 Tbsp tomato paste, 
2 oz. cream cheese, 
¼ cup grated Parmesan, 
½ lb. penne pasta, 
½ (9 oz.) bag fresh spinach.
