INGREDIENTS:
1 bag giant marshmallows, center hollowed out,
1 cup chocolate vodka of choice,
1 cup water,
2 packets Knox gelatin,
1 packet hot chocolate,
Melted chocolate for coating the Marshmallows, 
1 cup crushed graham crackers.

Chicken and Spinach Pasta Bake

Ingredients:
10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
2 tablespoons butter, 
½ onion, chopped, 
2 cloves garlic, minced, 
4 ounces chive and onion cream cheese, 
1 cup sour cream (or plain Greek yogurt), 
1 cup whole milk, heavy cream or half-and-half (I used half-and-half), 
½ cup shredded or grated Parmesan cheese, 
2 cups shredded mozzarella cheese, 
½ teaspoon salt, 
½ teaspoon black pepper, 
Pinch crushed red pepper flakes (optional), 
1 - 1 ½ cups chopped fresh spinach, 
2 cups cooked chicken (cubed or shredded), 
½ cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half), 
Fresh basil or parsley, for garnis.

Zucchini Noodles with Cilantro Lime Chicken

Ingredients: 
3 large zucchini, 
1.5 lbs boneless & skinless chicken breasts, cut into 1" pieces, 
1/2 tsp cumin, 
1 tsp salt, divided, 
1/4 tsp ground black pepper,
2 tsp any small hot pepper/jalapeño or to taste, seeded and minced (leave seeds in for very hot version), 
1 medium or 1/2 large lime, juice of
3/4 cup cilantro, chopped, 
Cooking spray (I use Misto).

Ingredients: 3 large zucchini, 1.5 lbs boneless & skinless chicken breasts, cut into 1" pieces, 1/2 tsp cumin, 1 tsp salt, divided, 1/4 tsp ground black pepper, 2 tsp any small hot pepper/jalapeño or to taste, seeded and minced (leave seeds in for very hot version), 1 medium or 1/2 large lime, juice of 3/4 cup cilantro, chopped, Cooking spray (I use Misto).
