Clean Eating Tuna Pasta Salad

Ingredients:
1 cup diced onion, 
1 cup diced celery, 
2 cans of chunk light tuna packed in water and drained, 
3 cups, pre-cooked whole grain pasta, 
1 cup frozen peas, defrosted, 
2 tbsp mayo, 
1/2 cup fat free plain Greek yogurt, 
1 tbsp red wine vinegar, 
Salt and pepper to taste.

Turkey Meatloaf Muffins

2 lbs ground turkey or chicken, 
3 egg whites, 
1 cup quick cooking oats, 
1/2 tsp ground cumin, 
1/2 tsp dried thyme, 
2 tsp dry yellow mustard, 
2 tsp black pepper, 
2 tsp chipotle pepper spice (Did not use), 
1 tsp salt (Did not use), 
2 tbsp garlic powder OR 2 cloves minced (I used 1/2 tbsp, but some might like the garlic…try both :) ), 
1 small onion, finely chopped, 
2 celery stalks, finely chopped.

Loaded Baked Potato Salad

8 medium Russet Potatoes, 
1 cup sour cream, 
1/2 cup mayonnaise, 
1 package of bacon, cooked and crumbled, 
1 small onion, chopped, 
Chives, to taste, 
1 1/2 cups shredded cheddar cheese, 
Salt and Pepper to taste.
