Chicken Noodle Soup

Ingredients:
2 tablespoons unsalted butter, 
2 tablespoons extra-virgin olive oil, 
1 onion, peeled and diced, 
4 celery stalks, small-diced, 
4 carrots, peeled and small-diced, 
1 teaspoon minced garlic, 
2 bay leaves, 
Kosher salt and freshly ground black pepper, 
2 quarts chicken stock or broth, 
3 cups cooked chicken, shredded or diced, 
2 cups wide egg noodles.
