INGREDIENTS: 1/2 onion, finely chopped, 2 garlic cloves, very thinly sliced, 1 cup tomato puree, ¼ tsp. oregano, ¼ tsp. crushed red pepper flakes, 2 tablespoons olive oil, divided, 1 small eggplant, such as Italian or Chinese, 1 zucchini, 1 yellow squash, 1 long red bell pepper, Few sprigs fresh thyme, Salt and pepper.
Fruit Salsa with Cinnamon Crisps
INGREDIENTS: CINNAMON CRISPS: 10 flour tortillas (10"), Cooking spray, 1/3 cup sugar, 1 teaspoon cinnamon. FRUIT SALSA: 2 granny smith apples, 1 lemon, 2 kiwis, 1 lb strawberries, 1/2 lb raspberries, 1 tablespoon brown sugar, 3 tablespoons preserves (I used raspberry).
