Layered Ratatouille

INGREDIENTS:
1/2 onion, finely chopped, 
2 garlic cloves, very thinly sliced, 
1 cup tomato puree, 
¼ tsp. oregano, 
¼ tsp. crushed red pepper flakes, 
2 tablespoons olive oil, divided, 
1 small eggplant, such as Italian or Chinese, 
1 zucchini, 
1 yellow squash, 
1 long red bell pepper, 
Few sprigs fresh thyme, 
Salt and pepper.

CINNAMON CRISPS:
10 flour tortillas (10"),
Cooking spray,
1/3 cup sugar,
1 teaspoon cinnamon.
FRUIT SALSA:
2 granny smith apples,
1 lemon,
2 kiwis,
1 lb strawberries,
1/2 lb raspberries,
1 tablespoon brown sugar,
3 tablespoons preserves (I used raspberry).

INGREDIENTS: CINNAMON CRISPS: 10 flour tortillas (10"), Cooking spray, 1/3 cup sugar, 1 teaspoon cinnamon. FRUIT SALSA: 2 granny smith apples, 1 lemon, 2 kiwis, 1 lb strawberries, 1/2 lb raspberries, 1 tablespoon brown sugar, 3 tablespoons preserves (I used raspberry).

I LOVE fruit. Love it. When I was pregnant with my first kid I went through a stage where all I wanted to eat was fruit salad. After a few months of that I moved into an orange-colored fruit kick. I ate tons of oranges, cantaloupe, clementines, etc. Even though I’m not pregnant any more, I’ve almost always got a good stash of fruit around my house.
