One-Skillet Paleo Mediterranean Chicken

A Mediterranean-inspired meal that takes just minutes to prepare! This colorful coastal dish is layered with lean protein, fresh veggies, and intense flavors. One-pan clean up!\n\n
Ingredients\n

1/2 yellow onion, diced\n
2-3 cloves garlic, minced\n
8 oz mushrooms, sliced\n
3 Roma tomatoes, diced\n
8 oz jarred artichoke hearts, liquid drained\n
1/2 cup sun-dried tomatoes, chopped\n
1/3 cup Kalamata olives, chopped\n
1 lb pre-cooked chicken ( I used organic oven-roasted sliced chicken breasts from True Story Foods )\
Fresh spinach – a couple of handfuls
2-3 Tbsp olive oil or ghee (1-2 tablespoons to sauté the veggies, another tablespoon for cooking)\n
1 Tbsp balsamic vinegar\n
1 tsp dried parsley\n
1 tsp dried oregano\n

2 lb red potatoes, chopped into 2 inch cubes, 
1 1/2 cups chopped Roma tomatoes, 
1 bunch asparagus, trimmed and cut into 1 inch pieces, 
3/4 cup fresh basil, chopped, 
8 cloves garlic, thinly sliced, 
3 tbsp olive oil, 
1 tsp chopped fresh rosemary, 
Ground pepper to taste.

INGREDIENTS: Cooking spray, 3 lb boneless, skinless chicken breast, chopped into 2 inch cubes, 2 lb red potatoes, chopped into 2 inch cubes, 1 1/2 cups chopped Roma tomatoes, 1 bunch asparagus, trimmed and cut into 1 inch pieces, 3/4 cup fresh basil, chopped, 8 cloves garlic, thinly sliced, 3 tbsp olive oil, 1 tsp chopped fresh rosemary, Ground pepper to taste.

pretzel sticks, broken into small pieces
