Spinach and Mozzarella Egg Bake

Ingredients:
5 oz. organic fresh spinach (4 cups packed), 
1-2 tsp. olive oil (depending on your pan), 
1 1/2 cups low-fat mozzarella (I used a low-fat mozzarella blend from Costco with 6 grams of fat in 1/4 cup.), 
1/3 cup thinly sliced green onions, 
8 eggs, beaten, 
1 tsp. Spike seasoning (or use any all purpose seasoning mix that's good with eggs), 
salt and fresh ground black pepper to taste.

Zucchini Noodles with Cilantro Lime Chicken

Ingredients: 
3 large zucchini, 
1.5 lbs boneless & skinless chicken breasts, cut into 1" pieces, 
1/2 tsp cumin, 
1 tsp salt, divided, 
1/4 tsp ground black pepper,
2 tsp any small hot pepper/jalapeño or to taste, seeded and minced (leave seeds in for very hot version), 
1 medium or 1/2 large lime, juice of
3/4 cup cilantro, chopped, 
Cooking spray (I use Misto).

INGREDIENTS:
1 package spice cake mix without pudding (I use Duncan Hines),
1 package Jello Brand vanilla pudding (4 serving size),
1 cup water,
⅓ cup vegetable oil,
4 eggs,
2 cups carrots shredded,
1 8 oz can crushed pineapple drained,
1 cup chopped walnuts or pecans,
Frosting,
8 oz cream cheese room temperature,
8 oz butter room temperature,
4 cups powdered sugar,
1 teaspoon vanilla,
3 chocolate covered pomegranates or mini-chocolate chips per cup cake.
